Executive Chef Ivan Yuen has a long and storied career in Chinese dining, uncompromising in his focus on authenticity of ingredients and technique. As the executive chef of Red 8, he brings this experience and passion to create dishes that honor traditional preparations from throughout the Chinese mainland and beyond.
Growing up in Hong Kong and Shenzhen, Chef Ivan was introduced to food and cooking by his grandmother. Propelled by his travels through the diverse regions of China, his appreciation for the cuisine expanded as he absorbed the nuances of taste and flavors that he continues to use on his menus today. His passion for food and the culinary arts ultimately landed him cooking in positions at various hotels in Hong Kong and Shenzen, and later in New York City, Chicago and West Palm Beach.
From 2010 to 2015, Chef Ivan served as chef de cuisine at Shanghai Terrace in the Peninsula Chicago Hotel which was rated the Number One Restaurant in Chicago by Zagat every year that helmed the kitchen. In 2015, he joined the Baha Mar Hotel and Casino in the Bahamas as the executive Chinese chef at ShuangBa Chinese Restaurant and Stix Noodle Restaurant. Most recently, Chef Ivan served as corporate executive chef of Chinese cuisine for Wegman's Food Markets, where he oversaw culinary development for almost 100 stores across the North East, before joining the Encore Boston Harbor culinary leadership team in 2019.
