TJ Ricciardi is the executive chef at Sinatra, where his menu provides a modern and sophisticated riff on familiar Italian classics that Frank himself would have loved. His authentic take on Italian cooking applies the traditions, techniques and seasonal ingredients from each region of Italy to each of his dishes.
A New Jersey native, Chef TJ began his career after attending the Academy of Culinary Arts on the southern Jersey Shore. Upon graduating, he worked at many local pubs and shoreline eateries until landing an executive sous chef position at Borgata Hotel Casino & Spa in Atlantic City. At Borgata, Chef TJ worked with Chef Luke Palladino in three uniquely designed Italian eateries as well as with Chef Stephen Kalt, opening Fornelletto Cucina, where he fell in love with the art of traditional Italian cookery.
Chef TJ has held chef positions at Loews Hotel and Starr Group in Philadelphia and opened and oversaw seven restaurant concepts while working with Harrah’s and Revel in Atlantic City, as well as at Valley Forge Casino Resort in Philadelphia, over the span of five years.
Bringing his years of experience and expertise to New England, Chef TJ joined the Encore Boston Harbor culinary leadership team in January 2019 when he assumed the role of executive chef at Sinatra. On his days off, he enjoys spending time with his wife and three sons.
